Hey, I'm reaching out because I can't figure out how to link my Apex account with SC. I've read several tutorials and watched YouTube videos, but when I make the connection, I only see the Apex SIM account, not the Eval or PA account. Thanks!

The instructions to connect to a Rithmic account (which is what APEX uses) are here:

If you have done everything correctly and are not seeing the accounts you think you should, then you would need to ask APEX about this - although our guess is that you are not using the correct credentials for the accounts you are wanting.

Although, we wonder if you are referring to the "Sim1" account (i.e. the built-in Simulation Mode account). If this is the case, then you need to disable "Trade >> Trade Simulation Mode On". In this case, refer to the following:
