The reason you are not getting what you expect is that when you reference periods back, it is the number of periods that are set by the "Time Period Type/Length". Since you are looking for a 5 day period, looking back 1 period would look back the period that started 10 days prior and when to the 6 prior day (i.e. days 6 through 10). 5 periods prior would be days 21-25.

The only way to do this would be to use the "Volume by Price" study and set the Input for "Volume Graph Period Type" to "From Start Date-Time + Fixed Time Length" or "From Start Date-Time to End Date-Time". This way you can set the particular start and end for the period you want to cover. Refer to the following:

This also means you would have to update that date each new day to move things forward by 1 day.
