There is not a way to control or filter the DOM Graph to show only certain values or exclude certain values.

We are also a bit confused by your statement about skewing the graph, as the DOM Graph does not have any impact on the size of the scaling for a chart. So your chart should not be adjusting due to the DOM Graph.

The one option that we want to point out to you is the "Market Depth Historical Graph" (you need to be on one of the Advanced packages to use this). This will allow you to define a range of data based on the percentages of the Maximum Depth. So you could exclude outliers by only showing data in the 90-95% range for instance. The only downside to this study is that there is not a way to only show the most recent information. It will always show the historical information as well for each bar. Refer to the following:
