In general, when you use the "Study/Price Overlay" the Subgraph Settings can not be changed in the Study/Price Overlay. You need to change the Inputs in the Study/Price Overlay to allow the settings to be changed. But, it sounds like you are having a different problem, where the setup of the source study is not flowing into the Study/Price Overlay and then you can not change it. Still, the first thing to do is to change the Input on the Study/Price Overlay for "Use Subgraph Name/Value Related Display Settings from Source Study" to "No" and select "Apply", then try changing the Name/Value Label as you want it.
