So I was not able to figure our why the dom was choppy and jumping rather than running smoothly during the replay...can you please help....

To some extent, this is just the nature of the replay. It is not a 100% exact reproduction of the live data. One of the things you can look into is the "Chart Update Interval" for that chart and see if decreasing it helps for this. Otherwise, you would need to go through the items at the following link and see if any of those can help:

also is there a way to highlight ie a different color the Recent Bid Volume if price trades below the bid as one can do in time and sale????

There is not.

I am a little confused with the volume profile and the current total volume....so here is a picture of my dom...from left to right...there is a volume profile with a delta profile overlayed on top of it...at price 17971.50 it reads a delta of 375 . the next column is the total curernt volume which reads 98...the last 2 columns are the bid total current volume and the ask total current volume....added together they equal 98...as I said this is the first time we have trade here since 2/12/2024 how can the delta show 375 if the volume traded at price is only 98 contracts?

Most likely this is due to the fact that you are using a "Trade and Current Quote Symbol", so you are probably viewing the data in the DOM for the MNQ and your Volume Profile is for the NQ. Refer to the following:
Chart Settings: Trade and Current Quote Symbol (text box) (Chart >> Chart Settings >> Symbol >> Symbol menu)
