It is your choice on what Time Zone and Session Times you use. Just keep in mind that the Start Time for your Session Times is going to determine the bar times. If you live in Los Angeles and have your Time Zone set to Pacific US Time and you are trading the CME Group (which is in Chicago), then you would want to have your Session Start Time set to the starting time of the market in your time zone, which would be 06:30 (08:30 Central US Time).
