The first thing we need to deal with is the following:
my surprise was that there was no stop or target that had previously been configured

As we noted previously, the most likely scenario is that the Target and Stop were rejected by the exchange for some reason. Unfortunately if that was the case, then the information regarding that is not going to be around any longer, as it is logged in the Trade Service Log which is only kept for as long as Sierra Chart is running.

Therefore, we simply have to watch for this again. If you place an order and the Stop and/or Target are no longer showing in Sierra Chart, then we need to see your Trade Service Log by following these instructions:

Second, with regards to the following:
On the other hand, when the order is triggered from the doom, the volume and price bars disappear

This should not be occurring. Can you please give us a "Before" and "After" screenshot of what you are seeing. You can take a screenshot by following these instructions:
