but when I go to Rollover Method and custom and Open Rollover Settings, it just hangs and never opens a new window (I actually always have to close Sierra Chart). Not like system stress but like bug. This is a separate issue you may want to look into.

Totally insane. Anyway, we are well on our way to dispensing with these Microsoft garbage dialogs. LAST ISSUE: I always was able to do All Charts in Chartbook, but now that's not even working. Regarding the primary issue, you have to make sure you have market depth data for the time period being replayed.
