How do you adjust the color of a line drawing? Clicking on the line only gives a limited number (8) of color options.

Those are the quick color selections that are limited to the 8 colors. To change the color and have the full color picker, right click on the drawing and select "Chart Drawing Properties". In there will be the option for changing the color. Select the button for "[Select Color]" to change the color.
