If I run SC using an AWS VM that is running windows, I also have to use their virtual desktop service to interact with the charts, is that correct? Or is there a different better way of using an AWS windows server that doesn't involve a virtual desktop / workspace?

Yes you do have to use the remote desktop functionality of Windows.
