I can not see GUI menu to set to the pixels smaller because the pixel amount is set to high

We are not understanding the issue.

If the "Small Pixel Amount Scaling Factor" is set too high, then you can lower it in "Global Settings >> Graphics Settings >> GUI".

When I made the pixel size to large it made the GUI window menu huge so I'm not able to see the pixel setting to set them back to the default setting because they are off the screen

What if you maximize the General Settings window? Can you then see the Value column?

We will see about adding a command to reset the column widths to default.
