Is it possible for me to add a 'Total Flat to Flat Trades Text Overlay' to my charts? I want to be able to view the number of trades I've executed.

There are a number of "Trade Data" studies. Refer to the following: Trading Information Windows: Trade Data Studies But if you are looking for one that gives you the number of trades within a Flat-to-Flat period, then we do not have this.
