How do I get a daily price chart of usdjpy from, say, Jan 2000 to Jan 2001 with package#1? Or can I not?

Open a Historical Daily chart. There is data back to 1993 for this symbol. You will need to increase the number of days loaded into the chart through Chart >> Chart Settings after opening it.

In Chart Settings, "Number of Days to Load" takes me back that many days from today. How do I go from Jan 2001 back to Jan 2000? There's no place to put in specific dates?

This is true. There is no way to currently specify an ending date. However, you can just scroll the chart back to the date range you want to look at.
