I consider switching to Sierra Chart's Live feed but I like the extra depth levels that I get from Rithmic. Will I still be able to see more than 10 depth levels if I use SC's live feed?

For EUREX there are 15 levels. For CME there are 10 levels. The only way we can see to increase the number of levels beyond 10 is to use the market by order data and we are going to be working on that before the end of the year.
