You can do it either way: Just to clarify to start, when you are referring to to time zone of the exchange itself, are you talking about the file>data/trade service settings>time zone or chart>chart settings>advanced settings>time zone?
Whatever works best for you. When using your own time zone, around the transition to and from daylight savings time you do have to adjust those Session Times and there is going to be a Session Times mismatch around the transition to and from daylight savings time.
