I notice that after laying down a ray and using cut (so that I don't continue to see the ray all across the chart), that the anchor point shifts to the end of the ray - basically making it a line. Is it possible to preserve the anchors points and just clip past the part where I cut?

In relation to this it would be pretty helpful to have a kind of partially extended ray. It extends but not forever. You'd think you could do this with a line, but it won't be accurate due to the anchor point resting on nothing.

It's pretty common through the day to draw temporary supply and demand lines that don't need to litter the chart for the rest of time, but only be accurate for that particular day.
