Your statements have us a bit confused. In particular, the following:
Normally when I would update different chartbooks for ES and NQ. I'd get the yellow box, and just rollover and all the charts would rollover.

Isn't this what is occurring now as well? When you select the option to rollover for a symbol, then all the charts for that symbol are going to rollover.

If you then want to have a chart for a previous contract, you would need to change the symbol for that chart to what you want. You may get the message that the symbol needs to be rolled over, but that message will go away after a few minutes.

You do not need to be concerned with the setting for "Detect Rollover of Current Futures Contract Symbols Based on Real Time Volume", as this just determines when to put up the message for rolling over. What you need to ensure is that the setting for "Chart >> Chart Settings >> Symbol >> Automatically Rollover Futures Symbol" is set to "No". Refer to the following:
