With regards to the symbol settings, there is nothing you need to change in those. If you have the Market Depth Historical Graph on a chart for a symbol, then the Market Depth will automatically be stored while your Sierra Chart is connected to the data feed. And for when you are not connected, we have historical market depth data available that will get downloaded (and if not, you can force the download). Refer to the following:

With regards to the coloring of the Market Depth Historical Graph, it depends on the colors you have set for the "Range x Min/Max Ask/Bid Color" and the other settings that define the top and bottom of the range of values you want to color.

Please let us know what exactly you want to see in terms of the Market Depth coloring (i.e. what values you want at what color) and we will point you towards how to set that up.
