The first thing to understand is that there are Global Graphics Settings and there are Chart Specific Graphics Settings. A Chart, by default, is set to use the Global Graphics Settings. If you want to have a chart be different than the global settings, then you need to go to Chart >> Graphics Settings - Chart and deselect the option at the top that states Use Global Graphics Settings Instead of These Settings. Refer to the following:

We mention the above, as it sounds like you have certain charts that are not using the Global Graphics Settings. The fastest way to solve the issue for those charts is to select the chart and then open Chart >> Graphics Settings - Chart and enable the option for Use Global Graphics Settings Instead of These Settings.

The other option is to modify each chart by selecting it and then selecting Chart >> Graphics Settings - Chart and selecting the Font tab and then modifying the appropriate font for the item that needs to be adjusted. Refer to the information here:
