Make sure you are making the changes on the correct Graphics Settings page. There are global and chart specific settings. If you select Chart >> Graphics Settings - Chart and the option at the top for Use Global Settings Instead of these Settings is Enabled, then you need to change the colors in the Global Settings (Global Settings >> Graphics Settings - Global), otherwise, you would make the changes in the Graphics Settings - Chart.
