The one image shows a setup from The Pit Futures Trading youtube channel. I am trying to figure out what the vertical bar is in the DOM that has red bars on the left and green on the right?

We can not say exactly what columns those are as the image is not of high enough quality. But in general what the user did was turn on the Volume Bars for those two columns and set the one on the left to be right aligned and set the color to red, and then set the one on the right to be left-aligned and set the color to green. Refer to the following for how to turn on the Volume Bars in the Trade Columns and set the alignment:
Global Trade Settings Windows: Show Volume Bars (Trade >> Customize Chart/Trade DOM Columns)

The second photo is from the Edge Trading Group youtube channel. I am not sure if he is even using Sierra Chart, but the first vertical bar he has shows the red bars on the left and green bars on the right. In the picture the large green bar is an order for probably 100 contracts, at the same time the person's exit order also pops up above it as a grey line. Is this doable in Sierra Chart? If yes how?

That looks like Sierra Chart, but the profiles you are referencing are not a standard part of our system. They must be from a 3rd party study. Unfortunately, we do not know which one it may be.

Also in other Edge Trading Group videos, he has Iceberg Lines. It is my understanding though that there is no data feed that tells anyone if an order is an Iceberg order or not. That said, I am guessing whatever software he is using is making an educated guess on it, thereby giving him a line where the Iceberg order is supposedly happening. Is this something that is doable in Sierra Chart?

We do not have anything built into the system for Iceberg orders. Again, if they are using Sierra Chart, then that would have to be a custom study.
