That is weird, I have Denali + IB, my 2000-tick bars on Sierra Chart looks almost identical with your "other_chart.png", very different than your "sierra.png" (see attached image). So, the difference is not caused by Sierra, but the data feed, hope Sierra team would know what went wrong. By the way, I would set evening session from 18:00 (assuming your time zone is Eastern), that is when new day start. But that has nothing to do with the difference we are discussing.
