From a certain perspective what you are stating about needing to keep the Trading DOM and Quote Board windows open forever is correct. If you want to keep those windows associated with a specific chart with the way you have them setup, then you need to keep them open. But, you can also use the concept of a Template, where you save the windows (in an open state) as part of a Chart that is part of a Chartbook. Then you can open that Chartbook and Chart and have those windows the way they were when you saved them. You could then change the symbol of that chart as you need.
