There is no way to do this on at the Chartbook level. You would need to do it at the Chart level by going to the chart and selecting Chart >> Graphics Settings - Chart and then unselecting the option for Use Global Graphics Settings Instead of These Settings. Then once you have the chart setup the way you want, you can duplicate the chart and change the symbol in order to keep the same graphics settings. You would then repeat for the other Chartbook setting it up the way you want.
