Let's start with the last question first. No, it is not possible to send orders to two different brokers at the same time from a single instance of Sierra Chart. The only thing that is currently available is the ability to send the same orders to multiple accounts held at the same brokerage. Refer to the documentation here on this: Order Allocation to Trade Accounts With regards to the other questions, it is a lot easier to just use the Trade and Current Quote Symbol within Chart >> Chart Settings.
