Since I was at Infinity with SierraChart before, presumably I'll simply transfer the chartbooks and charts on my PC over to the newly installed folder for Infinity, right?
Yes you can do this. Refer to this help topic:
Transferring Sierra Chart Settings and Data From Existing Installation to New Installation

You will also need to change the symbols of the charts to match what Transact uses. Refer to:

or just not pay the bill and it will deactivate?
Yes.

Is the Infinity/Transact data good?
We can only say for the very best data use the Sierra Chart Exchange Data Feed which you are already using:

Which will require that you use your own Sierra Chart account and not the one provided by Transact.

Update: Actually we need to make a correction here, while this was the case in the past, it is not currently the case. You can use Sierra Chart provided by Transact and use the Sierra Chart Exchange Data Feed but the feed has a 10 USD per month cost additional in this case. We apologize for not pointing that out earlier. We were just thinking of how this used to be until recently.
