Without knowing the configuration, we would assume that what you want to do is just close the charts in the Chartbook by going to the chart and selecting File >> Close Active Window. And a sheet can be deleted within a Spreadsheet by going to that sheet and selecting Spreadsheet >> Delete Sheet.
