Tony what you have said is wrong again and wasting his time. Correct setting using your own method would be:

Intraday Session from: 13:30:00 to 21:00:00
Evening Session: from 22:00:00 to 13:29:59

Not as you have stated

Intraday Session from: 13:30:00 to 21:59:59
Evening Session: from 22:00:00 to 13:29:59

I don't want to mess this any more than it is. but Does this will affect if I trade the Dax and FTSE?

Do i have to change the sessions for that instruments or something?

Np, your question was an easy question with an easy answer =]

If a different chart is for the FTSE 100 set that chart to London time and set the open/close hours on it. I dont know the open/close local times for anything else but you can easily look them up. I only know about the CME ES but it is the same set up method of charts for everything.

Any new chart set it to the local time for the instrument and set the sessions times correctly on that new chart

Is there a way you can change globally so your intraday sessions don't start at 14:30:00. Not sure how some of my charts are starting that session times but I have set my Global time zone as New York .I'm in CST.

I have had a few cases where I have adjusted the sessions on a few charts but wondering if I can do it somewhere so I don't have to adjust it manually on the Chartbooks that are open

ameetmedi, you could just set the time zone to CST? I think it can only be Global, I am not aware that we could set each chart a different time zone.

I left it as NY as it's easier to read the charts based on NY open close but not sure how some of my charts are open with I suppose 14:30:00 start times. I'm just trying to understand if I should change them manually or I can set something globally that would change it to NY times. I tried changing my Global to CST as well and this charts remain at 14:30

The "default" session times are set in the Symbol Settings. So when you open a new chart, or change the symbol of a chart, the Session Times are going to be set to what is set in the Symbol Settings for that product.
