I cannot seem to figure out how to edit text to my arrows.

In the configuration box, I use the "Prompt For Text" option, a box pops up when I create an arrow, and I can enter text.

However, I can't figure out how to edit this text later and modify it.

Also, I am trying to figure out where to change the font/size for that arrow-text, is it in the Graphics Settings? And if so, which one under Fonts does it use?

Right-click over the Arrow chart drawing and select Modify Text and enter the text and press OK.

If you do not see that command, then add it:

If the properties for a drawing does not have controls for the text size, then this is controlled through the Global Chart Drawing Font. Refer to the following:
Chart Drawing Tools: Global Chart Drawing Font (Global Settings >> Tool Settings >> General >> Drawing Font)
