The Quote Spreadsheet is largely a standard Sierra Chart spreadsheet, particularly outside of the main columns (i.e. column S in your example). So enter the following formula to get today's date:
=TODAY()

Then highlight the cell and select "Spreadsheet >> Number Format" and set it to "Date".
