In my instance I have several charts. When I change a symbol in one chart, a few other also make the change. How can I disconnect them? - so when I change one chart i.e. from DAX to EUR other chart will not change it?

The most likely situation is that they are setup to have the same Link Number and are linked for the Symbol. You will need to unlink them.
