Is it possible to increase the amount of time each individual chart appears on screen while scanning, so that each chart appears for say 5 or 10 seconds? disregard I just assigned a keyboard shortcut that works

Yes. Each individual chart now has its own Chart Update Interval which can override the global setting. So you will want to set that to 10000 ms.
