when creating a new ESH14 chart with a begin date before the current contract, Sierra does not automatically create a back adjusted chart?????

Open a new Historical Chart through File >> Find Symbol. And enable the Continuous Futures Contract option:

there is no 'continuous futures contract' option in the Find symbol window before opening the chart; so I assume the answer to my question is, NO, and we must do it manually in advanced chart settings?? Why no global setting? Thanks.

You need to enable that option through Chart >> Chart Settings >> Advanced Settings.
