I'm using Sierra's Danali data for my Sierra charts and all of my YM, NQ and ES charts are still on the ESH20 symbol. Is there a way, within Sierra, to change the symbol on all charts in all workspaces over to the current M contract without having to do them one at a time?

You need to use Chart Linking and link the charts for the same symbol using the same Link Number and link the Symbol: https://www.sierrachart.com/index.php?page=doc/ChartSettings.html#LinkNumber You do have to rollover each symbol individually but other charts for that same symbol will be done automatically when using chart linking.
