I have a question about setting up a 1 minute chart with different start/end time.

Normally, time-based charts begin exactly at the zero-second mark, eg. starts at xx:01:00 (hour:minute:second) and ends at xx:01:59.

Here's my question: is it possible to start the bar at xx:01:05 and end at xx:02:05 instead (eg. delay or precede by x seconds)?

Yes, you can do this by setting the Start Time for your session to be offset by that amount. For example, if the normal session start is 08:30:00, then you would instead start the session at 08:30:05 to have the bars start at the 5 second mark.
