I would like to have a separate tool values window open for each product that I'm trading (ie. 2 or more tool values windows open at the same time on different monitors). Is this possible?

Have a look at using the Text Display for Study study: https://www.sierrachart.com/index.php?page=doc/doc_TechnicalStudiesReference.html#s334 You can set it to display these values as text on the chart.
