I am trying to load more bars on the 1hr chart but it only seems to show the last 4-5 weeks.
How can I increase this?

You need to drag the scrollbar box towards the left to go back in time.

when i do that it changes the volume by price peaks and troughs.
Shouldn't they stay the same or is it only doing it on visible bars?

Yes it is because the Volume by Price study is set to Visible Bars. Over what time period do you want the volume profiles based on?
